Our signature dark roast, featuring our Monsooned Malabar. This is a dry processed coffee that is taken, historically, to the Malabar Coast post-drying to be exposed to months of moisture from the monsoon winds and rain. The Monsooned process is designed to mimic the exposure to the elements that the coffee would have received while in transit on clippers to Europe in the earliest days of coffee exportation, and results in a perfectly pH-balanced bean with no acidity. At specialist drying yards, with raking, turning and ventilating, this well-managed process gives consistency in a caramel profile and syrupy body.
